Cooking on an open fire with my cast iron is so delightful. Open fire iron cooking! Today I am harvesting at some very close and local farms. Even though I don’t own a farm yet, I consider my suburban homestead to be my everything so naturally I bought a home in the middle of many farms! Today I visit a local blueberry farm, a chicken homestead family who sells their eggs, and use my maple syrup harvested in the Spring thirty minutes from me in the Adirondacks where there are about 6 maple farms! Seriously, it doesn’t get any better than this. I feel grateful for this land and this bountiful harvest. It doesn’t get more local than this! I gather+seasonal+local and I love it! Recipe Pancakes (Dairy and Grain Free)
1 cup Birch Bender Paleo Flour (link above) I love this flour (no affiliate to this company) or any flour of your choice (if you use a mix follow instructions)
2 eggs
3/4 cup of Almond Milk
2 handfuls of blueberries (I added a handful of wild blackberries)
To cook with I use Vegan Butter (link above) but you could use cow’s milk butter 1-2
tablespoons
Mix ingredient, let sit five minutes then add to pan, flip after about 2-8 minutes (this depends on your flame) This can be an intuitive moment and an opportunity to be truly present. If you get distracted they may burn. Oh well, try again.
Mix 1 cup of maple syrup with 2 handfuls of mushed berries (I do this by hand) but you can use a fork. Heat over low heat. Enjoy!
