Did you know you can eat Squash Blossoms? You can have it raw like a salad, fry it as a fritter, or my personal favorite, make them into savoury pancakes!
The weather has been so hot in my city, my squash plants are only producing male blossoms. Don’t let them go to waste! It is the perfect time to make these squash blossoms pancakes!
Ingredients:
Squash blossoms
Egg
Korean pancake flour mix
Pinch of salt
Water
You want to mix the egg, pancake flour, salt and water until the batter is the consistency of regular pancakes. The amount depends on how many squash blossoms you have.
You want to pan fry the battered squash blossoms until they are golden brown on both sides. Eat while it’s hot but be careful, pan frying creates a hot pocket of air inside the blossoms so don’t burn yourself!
Enjoy with a dipping sauce or eat as is!
