Banh Khot is a crispy mini pancake dish that my sister and I used to make often while growing up. We would set up a small table and she would sell them to me like the ladies at the food market; except I didn’t pay her real money. 😜
The traditional Banh Khot is a little bit thicker, but I like mine thin and crunchy like potato chips. If you like yours thick then just add more batter. My favorite brand of Banh Khot/Banh Xeo flour mix is Huong Xua. Enjoy! 😊
