How to make fluffy vegan pancake | freezing pancakes idea | easy breakfast

Looking for fluffy vegan pancakes?! These fluffy banana pancakes are super easy to make and it is so soft and fluffy texture. It’s egg and dairy free. I always make a few batch of pancake and freeze them and it really help me when I’m not in mood to make breakfast on a busy weekday morning. Also this is the perfect way to enjoy breakfast for lazy Sunday! (watch my video to see how to freeze the pancake properly). If you don’t have banana, you can just omit it 🙂

Cook Time: 15 minutes
Total Time: 30 minutes

Banana pancakes recipe:
(Makes 10 to 11 pancakes)
2 cups flour
4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp brown sugar

Ideal substitute for egg in baking:
2 tbsp vegan egg replacer + 6 tbsp water
Stir with fork approximately 30 seconds, until the mix is blend through.
(Vegan egg replacer-Brand “YES YOU CAN”)
2 bananas, roughly mash
2 tbsp oil
350ml plant milk

-Instruction:
1) Mix together flour, baking powder, baking soda, salt and brown sugar.
2) In an another bowl mix together mashed banana, vegan egg replacer, oil and plant milk. Mix well combine.
3) Fold in the mixture into the flour until just combine. It’s ok if there’s some lumps. Rest the batter about 10 minutes.
4) Heat the skillet with medium low heat. Add 1/4 cupfuls of batter in the oiled pan. Cook until bubbly on top and golden on the bottom. Flip and cook another 2 minutes.
5) Pour the date syrup on the pancakes before serve. Enjoy with your favourite fruits.

Here are the three smart ways to reheat frozen pancakes:

Microwave-
Arrange four pancakes on a microwave safe plate in a single layer. Reheat for 60 second.
⬇️
Oven-
Preheat the oven to 180°C, heat the pancakes on a foil- covered (this will keep the pancakes from drying out) with baking sheet for a about 10 minutes.
⬇️
Gas stove:
Place the pancakes on the warmed skillet. Flip the pancakes every 30 seconds or so to help them heat evenly.
