Today we are making my favorite Chinese food – Chives pancakes, a very traditional Chinese pancake that’s often made in the North East part of China.

Dough:
– [ ] Use all purpose flour 3-4 cups and add one bowl of hot water and mix, then little by little add one bowl of lukewarm water and mix until you get a nice dough, not too sticky but don’t want it to be too dry.
– [ ] Let the dough rest for at least 40 min.
Filling:
– [ ] Clean and wash the chives, and put to the side to let them dry.
– [ ] Fry minced pork meat in the pan, and try to get as much as the oil out of the meat – once its fried add to a bowl, and leave the oil in the pan.
– [ ] Fry 4-5 eggs depending on how much filling you want, fry them and make it into scrambled eggs, but cooked so they are starting to turn brown-ish, and make them into small pieces.
– [ ] Add the egg to the pork filling and let it cool down.
– [ ] Once the chives are more or less dry, chop finely and add to the cooled down pork and egg mixture.
– [ ] Add oyster sauce, salt, chicken powder, Sichuan pepper powder, 5 spices powder, and a bit of sesame oil, and mix together until you think the filling taste the way you want it.
Wrapping:
– [ ] Make the dough into a ball, and flaten it.
– [ ] Roll the dough like when you make dumplings, but make bigger.
– [ ] Fold it like a dumpling and then kind of push it down so it gets flat like in the video.
Cooking:
– [ ] Fry it in a pan with oil, but if you have a pan for making pancakes I suggest using that as it won’t burn as easily.
