Hi everyone!
This recipe is my “for now” fav. You would think oats as heavy and dense, but no no no….. the combination of ingredients work well together to make the fluffiest and most delicious pancakes.
Note:
1. If you don’t have buttermilk not to worry its easy to make. 1 cup of whole milk to 1 1/2 to 2 tbsp white vinegar, let sit for 5 to ten mins. The rest of the buttermilk can be stored in the freezer for later use.
2. If you do not have coconut sugar regular sugar will work. The reason I used coconut sugar is simply to avoid the spike in my blood sugar and so I can have these pre-workout minus the frosting …lol
