Vegan Chocolate Chip Cookies
Makes about 52 cookies depending on how big they are
2 ¼ cups all purpose flour
1 tsp baking soda
1 tsp salt – I leave out and it doesn’t taste any different
1 cup plant based butter
¾ cup sugar
¾ cup brown sugar
1 tsp pure vanilla extract
½ cup applesauce
12 oz pkg of vegan baking chips
Combine flour, baking soda and salt (if your going to use it) in a small bowl
Beat butter, regular sugar, brown sugar and vanilla extract in a mixing bowl until creamy.
Add applesauce
Gradually beat in flour mixture
Stir in chips ( I use my mixer on low for this)
Stick bowl in frig for about an hour to harden everything up. Makes the cookie not spread out so much.
Drop cookies by teaspoon full on cookie sheets
Bake for 8 to 10 minutes until brown ( depending on your oven)
Cook on a cookie sheet for 2 minutes and remove to wire racks to cook completely.
