hi guys it’s Kristen from sick sisterstuff I am sister number 2 and in caseyou didn’t know it is cookie season Ilove cookies around Christmas time andso today I’m sharing with you a newcookie recipe it is called grandmaBetties carrot cookies[Music]now like I said I have never made thisrecipe before because I am actuallycollaborating with my friend AaronGalloway I met her husband at a YouTubeconference in Cincinnati and favoredthose two together are so interesting sothere used to be big employers then theydecided to you know what this life isn’tfor them so they picked up they moved toWyoming and now they have a youtubechannel called our Wyoming lifeI love Wyoming I grew up in Utah so itjust holds a special place in my heartso in our collaboration um we talkedwith Aaron a lotI talked with Michael a lot and wedecided to do a swap of recipes sothey’re actually making my Apple pralinebread they go through step by stepprocess of how they made itand then they also sell things at theirfarmers market so it was the process ofgetting it together packaging it andthen selling it there farmers market inWyoming edits such an interesting storytheir channel is so fun to watch itwas so funny when she was giving me thisrecipe she’s like um so kind what kindof just throws it together and so she’snot exactly sure what’s in it so she shehad to go and make the recipe so sheknew how to tell me how to make it knowso once I started getting going oh mygosh this smell that it put off was sogood if you like carrot cake this isabout ten times better anyways be sureto check out packagingis so nice because it doesn’t make ahuge mess so I prefer using these theyare great then next I’m just gonna addone egg to my mixture and then afterthat just 3/4 cup of sugar then you’rejust gonna blend it together till it’snice and creamy alright that looks goodokay we’re gonna move this up just alittle bit so I have some room and Ihave been cooking one cup of carrots soI’ve been boiling them with water and alittle bit of salt then I drained thematurity of the water and I’m justmashing them up you want it to be a nicetexture not quite like baby food youwant some chunks in there so I’m justchopping it up kind of like almost likesand chunky mashed potatoes once you’redone mashing they have to coolcompletely before you add them to yourCrisco mixture my trick is I put in afew Ice Cube’s mixed it around drainedit out and then it was all ready to gowhen I needed itonce the carrots are completely cooledyou just pour that in with your Criscomixture[Music]next you’re gonna add about a half ateaspoon of almond extract you can do afew drops but I love it cited about halfa teaspoon then one teaspoon of vanillaand you just kind of mix that around alittle bit until it’s combined thenyou’re just gonna add two cups of flourto your mixture and then just a littlebit of salt about half a teaspoon but Ikind of just eyeball it and you’re donewith your salt you just mix it alltogether it takes a little bit to get itgoing keep stirring it will become anice awesome cookie doughit really looks so good okay the secretwith these is you have to chill them forabout 40 minutes to an hour so then theyget a nice plump look to them now I liketo make these cookies just a little biton the smaller side so they’re likebite-sized then we’re going to bake themat 350 degrees for 10 to 12 minutes nowfrom my most favorite partit’s the frosting so we have onetablespoon of butter that’s roomtemperature juice from one orange orabout four tablespoons of orange juiceand then I just added um one cup at atime of my powdered sugar just becauseyou kind of it depends on what textureyou want your frosting I like mine thickinstead of really light like a glaze Ilike it thick and solid so I ended upusing about two and a half cups ofpowdered sugar and now for the fun partthe frosting so see how my frosting ispretty thick you could make it a glazeif you want to but I love thick frostingthat’s probably one of my most favoritefoods so then you’re just going to frostall these little cookies it should makeabout sixty little cookieshere is the final cookie my husband bowto them
