Cookies & Cream Pandesal

Hey lovely people~! Here’s another pandesal recipe for y’all to try at home! This is actually the Condensed Milk Pandesal recipe I did earlier but with Cookies and Cream! The condensed milk pandesal I did reminded me of milk bread which I enjoyed but I wanted something more and immediately thought of cookies and cream! I used the cookie crumbs as coating instead of the usual bread crumbs and filled it with cookies and cream! Pandesal is normally enjoyed warm but I still enjoyed this cold as much as I did when it was warm. I hope y’all give this recipe a try 😀

How to Make Cookies and Cream Pandesal (w/ Cookies & Cream Filling)

INGREDIENTS:
Yields: 12 pcs. of pandesal
Preheated Oven: 185°C (365°F)
Bake Time: 15 minutes

INGREDIENTS:
‘ * ‘ = Notes/Remarks

~~Cookie Crumbs~~ *for coating
6 pcs. Cookies & Cream
*Separate the cream from the cookie sandwich and use a food processor and pulse until the cookies turn into fine crumbs. Put the cream in a separate bowl to add in the Cookies & Cream filling.
*If you don’r have a food processor use:
60 g (1/2 cup) Chocolate Cookie Crumbs

~~Cookies & Cream Filling~~
6 pcs. Cookies and Cream
*using a food processor, pulse until the cookies are in small chunks or you can go slightly bigger than what I did on the video. Your choice 🙂
*If you don’t have a food processor, use a zip lock and put the cookies in there. Use a rolling pin and crush the cookies inside.

~~Condensed Milk Pandesal~~
420 g (3 1/2 cups) + additional for kneading ALL PURPOSE BREAD / BREAD FLOUR
*Use a scale to weigh your flour but if you’re using measuring cups, DO NOT scoop flour from the container using your measuring cup. Use a spoon to scoop the flour into your measuring cup and use a knife or any straight object to level the flour across the measuring cup.
3 g (1/2 tsp) SALT
5 g (1 1/2 tsp) INSTANT DRY YEAST
*If you’re using Active Dry Yeast, use the same amount as stated in the ingredients. Dissolve the Active Dry Yeast and Sugar in lukewarm Milk. Leave it for 5 – 10 minutes or until the yeast foams up oractivated.
1 large EGG
55 g (1/4 cup) UNSALTED BUTTER, MELTED
*Bring the melted to room temperature before adding it to the mixture. Too much heat will kill the yeast. We don’t like dead yeast X_X
118 ml (1/2 cup) MILK, LUKEWARM (34°-38°C / 93°-100°F
*You can use whole milk or evaporated milk
5 ml (1 tsp) VANILLA EXTRACT
150 g (1/2 cup) CONDENSED MILK

*Knead 5-8 minutes using an Electric Stand Mixer
*Knead 10-12 minutes by hand (a.k.a. non stop arm workout)
*Dough should feel smooth and elastic

1st Rise: 1 – 2 hours
Proof: 30 minutes
