• Butter – 170 gr.
• Sugar – 170 gr.
• Eggs – 1 pc.
• Lemon – 1 pc.
• Pistachios – 50 gr.
• Flour – 280 gr.
• Powdered sugar – for glaze
Beat the soft butter for 5 minutes. Then add sugar and beat for another 3 minutes. Add egg and continue whisking. Add lemon zest, pistachios and flour to this mass. Knead the dough and refrigerate for 2 hours.
Roll out the dough, form a cookie and bake for 10 minutes at a temperature of 180 ° C.
Remove the finished cookies from the oven. While the cookies are cooling, prepare the icing: 4 tbsp. l of lemon juice combine with powdered sugar. Lubricate the cookies with icing, sprinkle with pistachios and enjoy.
