Oatmeal Surprise Cookies

RECIPE: Oatmeal Surprise Cookies

INGREDIENTS:
3 bananas, ripe, large
1/4 cup vegetable oil
1 egg (optional)
1 1/2 teaspoons vanilla
1 1/2 teaspoon cinnamon
1 teaspoon Kosher salt
2 1/2 cups old fashioned oats
Cooking spray

Additional Ingredients:
1/2 cup of any two of the following (1 cup total):
Raisins, any color
Coconut, shredded
Nuts, chopped, any type
Chocolate chips, dark or semi-sweet
Fruit, dried, chopped, any type
Dates, chopped

INSTRUCTIONS:
1: Preheat oven to 350°. Spray 2 baking sheets with a cooking spray.
2: Mash bananas with a fork.
3: In a large bowl, mix ingredients together in order. Mix well after each addition.
3: Drop by a heaping teaspoonful on a greased baking sheet.
4: Bake at 350° for 25 – 30 minutes or until they start to become golden on the top and bottom.

NOTES:
Be creative and try other additional ingredients.
You can use 4 small bananas instead of 3 large.
I have substituted 1/2 cup no-sugar applesauce or pumpkin puree for some or all of the oil and they still taste great.
These freeze well. You can place a few in a sandwich bag in the freezer, and they are ready to go for an easy breakfast, snack, or in a lunch.
Use can use another type of salt if you prefer.
Old fashioned oats are also called rolled oats.

they will be a delicious surprise[Music][Music]hello and welcome to cooking lessons forDad where you learn to cook healthy cookeasy my name is Ken brayer and today weare making delicious oatmeal surprisecookiesI love these cookies I’ve been makingthem for years the reason I call themsurprise cookies is because you can mixup some of the ingredients and make itdifferent every time if you want to it’sreally easy to make their healthycookies well depends on what bonusingredients you put in them but Iusually put healthy ones in theingredients in this recipe are ripebananas vegetable oil and egg which isoptional vanilla cinnamon saltold-fashioned oats cooking spray andthen you have a couple optionalingredients which we’ll talk about laterthe first thing that you’re going to dois preheat the oven to 350 degrees whichI’ve already done next I’m going tospray a baking sheet with cooking sprayyou might need two pans and I’ll spreadthe other one too next we’re going toadd our ingredients into a large bowlwe’re going to add them one at a timeand mix them in so you need three largeor four small ripe bananas and I havesmall ones so I’m going to use four andthey don’t have to be this right but youjust need to make sure they have quite afew brown spots on them so they’ll besweetso just go ahead and add those to thebowlso take a fork or a potato masher and goahead and mash the bananas till they’resoft and mashed up okay you want themvery mashed up they’re going to be thesweetener in your cookies and you don’twant big clumps you want it evenlydistributed in your cookies next we havea quarter cup of vegetable oil you canuse whatever type you prefer after eachingredient you’re going to go ahead andmix the ingredients through and then oneegg which is optional I like to crack myegg into a bowl first that way if I getany shells it’s easier to get out thenif it’s in my my mix okay mix that inlike I said the egg is optional I’vemade it both ways they’re good both waysso it’s up to you I couldn’t hardly tellthe difference I kind of like the extraprotein in it but you don’t have to putit in next we have one and a halfteaspoons of vanilla and you can adjustthese ingredients to your taste if youwant more or less I’m going to put onein just a little bit next one and a halfteaspoons of cinnamon I’m just going touse the half teaspoon three times forone and a half one teaspoon of saltI have kosher salt but you could usewhatever kind you like actually I’vebeen forgetting to stir these in it’sbetter if you stir it in after in eachingredient you do want everything mixedwell before you put the oats in okaythat’s mixed well now we have two and ahalf cups of old-fashioned oats and youwant the old-fashioned not the quickoatsonce the oats are mixed in you’re goingto put in your surprise ingredients Ihave raisins and walnuts half a cup ofeach just put like one cup of total ofwhatever ingredients you like you couldput all different kind of nutsthese are walnuts you can put pecansBrazil nuts almonds whatever you likestir that in then I have a half a cup ofraisins you could put other dried fruitsyou could put craisins dates I’ve evenput fresh blueberries in before that’sreally good an ingredient that is reallygood as chocolate chips I put darkchocolate semi-sweet chocolatebittersweet chocolate and that’s reallygood these are super healthy but ifsomebody you think might not appreciatesuper healthy cookies throw somechocolate chips in and they’ll neverknow they’re healthy so next we’re goingto put them on the baking sheet okay nowwe’re going to put them by heapingteaspoon on a baking sheet and you canmake them smaller or bigger if you makethem bigger they’ll take longer to cooksmaller they’ll cook faster and youcould substitute some or all of the oilwith applesauce or pumpkin puree I’vedone that I still taste delicious okaysomething else I’ve done is I make halfwalnut raisin then I’m gonna chocolatechips and add a quarter cup of no Ithink I have a third of a cup ofchocolate chips I’m gonna put it for theother half stir them in so we’re goingto put our raisin chocolate chip andwalnut cookies on another cookie sheetnext we’re going to put them in the oven25 to 30 minutes or until they start toget golden brown on the top in thebottom so we’ll go do that nextokay we’ll check them in about 25minutes so it’s been almost 30 minuteslet’s check our oatmeal surprise cookieshmm look at that nice and golden therewe go and let’s go try them our cookiesare finished let’s go ahead and put themon a plate and we’ll try them it smellsso delicious we have raisin walnutoatmeal surprise cookies raisin walnutand chocolate chip oatmeal surprisecookies you can get creative let me knowwhat you put in your cookies and I’mready to try them
