How to make wonderful dates cookies at home?
Ingredients:
1 egg
1 egg yolk
1 tsp vanilla extract
1/2 cup sugar
1/2 cup melted butter or oil
2 cups all purpose flour
1 tsp baking powder
For filling:
200g date paste
1 tbsp soft butter
pinch of cinnamon
pinch of cardamom
Method
Prepare filling by adding soft butter, pinch of cinnamon and pinch of cardamom(optional) to the date paste, knead together until you get smooth date paste.
In a large bowl add eggs, sugar and vanilla, whisk together until sugar dissolve in eggs.
Add oil or melted butter, give it a quick whisk
Add dry ingredients into the egg mixture,knead till you get a smooth dough.
Fill the dough with date filling, close dough and roll with hands.Cut it into equal sized cookies and using a fork decorate them by making lines.
Bake in preheated oven 220°C / 430 for 7 minutes or until golden color.
