Cook with Me! | Cookies – Part 2 | Fudgy Brownies, Peanut Butter, & Ginger Cookies

Welcome to Part 2 of my Cookie Recipe Book Series! I chose to make the Fudgy “Favorite” Brownies, Peanut Butter Cookies, and Ginger Cookies from my Sarah Kieffer Cookbook. ALL 3 of these recipes are KEEPERS! 🙂

RECIPES

****Fudgy Favorite Brownies****

INGREDIENTS
*4 Eggs
*2 tsp Vanilla
*1 & 1/2 Cups Granulated Sugar
*1/2 cup packed brown sugar
*1/2 cup Canola Oil
*1 stick unsalted butter
*8 oz bittersweet chocolate chips
* 1/4 cup Dutch Processed Cocoa Powder
* I Cup + 2 TBSP Flour
* 3/4 tsp Salt
* 1/2 tsp Baking Powder

DIRECTIONS
Mix together eggs, vanilla, granulated sugar, brown sugar, and canola oil in a bowl. On the stove over medium heat–melt butter & bittersweet chocolate together until smooth. Then add in Cocoa Powder and stir until combined. Add Butter/Chocolate mixture into mixing bowl with egg/etc. and stir. Add in Flour, salt, and Baking Powder and stir until combined. Place in greased 9×13 pan and bake at 350 degrees for 22-27 minutes.

****Peanut Butter Cookies****

FIRST – Candied Peanuts:
1 Cup of Peanuts, 1/4 cup granulated sugar, and a pinch of salt in a pan on the stove. Heat over low heat slowly until sugar is dissolved/coats the peanuts, and the nuts start to brown. Remove from stove and pour onto parchment paper in one layer to cool completely. Give a rough chop once cooled completely.

INGREDIENTS
*2 sticks unsalted butter at room temp
*1 cup Brown Sugar
*1/2 cup granulated sugar
*1 cup Creamy Peanut Butter (I use Jif)
*1 Egg
*2 tsp Vanilla
*1 tsp Baking soda
*3/4 tsp salt
*2 cups + 3 TBSP Flour

DIRECTIONS
Beat butter in stand mixer on medium speed for 1 minute until light and fluffy. Add in Brown and granulated sugar and mix to combine. Then add in Peanut Butter, egg, and vanilla–mix. Add in Baking soda, salt, & flour–mix. Hand mix in 1 cup of candied peanuts as final ingredient. Place on parchment paper baking sheets in 2 TBSP balls. Slightly flatten with fork to make traditional Peanut Butter shape on top of the cookies. Bake at 350 degrees for 9-10 minutes.

****Ginger Cookies****

INGREDIENTS
*2 sticks unsalted butter, room temp
*3/4 cup brown sugar
*1/2 cup granulated sugar
—plus another 1/2 cup for later when rolling cookies
*1/3 cup light/mild molasses
*1 Egg + 1 Yolk
*1 tsp Vanilla
*2 & 1/2 Cups Flour
*1 tsp Baking soda
*1 & 1/2 tsp Cinnamon
*1 tsp Ground Ginger
*1/2 tsp Ground Nutmeg
*Pinch of Ground Cloves
*3/4 tsp Salt
*1/4 Cup Crystallized Ginger, diced

DIRECTIONS
Cream butter in stand mixer for 1 minute. Add in brown and granulated sugars–mix. Add in molasses, Egg + yolk, and vanilla–mix. Add in Baking soda, Cinnamon, Ground Ginger, Ground Nutmeg, Ground Cloves, Salt and Flour (Gradually)–mix until combined. Lastly, add in the chopped crystallized ginger. Take a 2 TBSP portion and roll in 1/2 cup of granulated sugar before placing on parchment paper lined baking sheets. Bake at 350 degrees for 10-11 minutes.
