Hi everyone! The deed has been fulfilled, these horrible cookies have been made. As I mentioned in the video, you’re probably not gonna like these cookies. But that doesn’t mean you shouldn’t try it yourself! For my first time making macarons they turned out kinda alright, and this is a good recipe to “waste” a first try of making macarons yourself. Hope you enjoyed, and find out how to make them below:
Ingredients:
1 1/2 cups (150g) almond flour
1 1/2 cups (150g) powdered sugar
3 eggs worth (110g) of egg white, divided in half
About 2 tsp (15g) of red food coloring
3/4 cup (150g) sugar
1/4 cup (40g) water
About 10 (40g) cornichons, very finely diced
6g powdered gelatin, plus 2 tbsp. (20g) water
1 1/4 cups (350g) Heinz ketchup
4-5 drops of hot sauce
Instructions:
1. Sift together the almond flour and powdered sugar in a separate bowl, then add half the egg white and the food coloring but do not stir them in
2. Add the regular sugar and water to a saucepan, and heat while stirring fairly often, until it reaches 245°F (118°C)
3. While the sugar heats, add the other egg whites to a large bowl and whip them until they form stiff peaks. If they form peaks before sugar is done, stop whipping
4. Once the sugar is heated, start whipping the whites again and pour the sugar directly from the burner onto the whites. Continue whipping until egg whites drop to 120°F (50°C)
5. Gently fold in the almond mixture
6. Pour the mix into a piping bag with a regular tip, and pipe the cookies into about inch wide rounds onto parchment paper lined baking sheets
7. Let cookies sit for 30 minutes to develop a crust, and begin making the filling while waiting
8. Combine gelatin and water in a small bowl, and let sit for a few minutes until all water is absorbed
9. Microwave the gelatin for about 15 seconds until melted
10. Combine gelatin and 1/4 of the ketchup, then mix in remaining ketchup
11. Stir in cornichons
12. Add hot sauce, to taste (again that’s seriously what my recipe says)
13. Preheat oven to 350°F (180°C)
14. Bake cookies for about 12 minutes, and towards the end rapidly open the oven door twice. When cookies puff up in the middle they are done
15. Let cookies cool completely on sheets
16. Put a little bit of filling on the bottom of one cookie, sandwich another cookie on top, and place in fridge for an hour until filling sets.
