Using what I had on hand, I made these sweet potato bread tarts. They are so easy and very delicious. Soft wrap types of bread make excellent tart and pie bases. INGREDIENTS:
3 – 4 bread wraps
1 x bunch of bok chop sliced into short strips
1 x medium-large red onion diced
button mushrooms thinly sliced (approx 6)
1 x large sweet potato, peeled and cut into cubes for boiling
soy sauce
salt to taste
olive oil for cooking and greasing muffin tin
METHOD:
-boil the potato till softened and easy to mash, then set aside-preheat oven to 180 degrees celsius
-lightly oil a twelve hole muffin tin-cut out rounds of wrap bread and place into the muffin moulds (you can use the off cuts too, to make up the shapes)
-in a pan fry off the onion till just starting to golden-add the mushrooms, cook till golden, stirring occasionally
-add the sliced bok choy and cook till wilted and softened-add a splash of soy sauce, stir to combine and take off heat, season to taste
-divide the mixture in the pan between the tart bases-top the mixture with the mashed sweet potato, pressing down to fill the bases to the top-place in the oven and cook till bread bases are crisp (approx 20 – 25 minutes)
-remove from oven and let sit in pan for 5 minutes to allow the tarts to release from the sides-remove from tin and place on a wire rack to cool slightly before serving
