Despite my love for German baked goods, I rarely bake at home. I’m more the type of guy who prefers cooking.
However, I was craving for a typical German sweet pastry called “Hefezopf”. “Hefezopf” means something like “yeast braid” and when you look at the ingredient list and the shape of the loaf, you know why.
The sweetness and freshness of my signature “Hefezopf” makes it a perfect and outstanding part of your next Sunday breakfast!
My version of “Hefezopf” is a little optimized, since I try to make it juicier by using a quark filling. It also keeps the loaf fresh for a longer time.
As you can see later in the video, the braided shape does not stay after baking. Should you try to redo this recipe, I recommend you to let the loaf rest again for an hour after braiding it, so that all tensions in the dough are released before you put it in the preheated oven.
The ingredients list for one loaf:
For the yeast mixture:
– 6.5 tsp of fresh yeast
– 4 tbsp of warm milk
For the dough:
– Your prepared yeast mixture
– 6 cups of all-purpose flour
– 2 eggs
– 1/3 cup of molten butter
– 1 cup of warm milk
– 1/2 cup of sugar
– 1 tsp of salt
For the filling:
– 1 cup of quark
– 1 egg yolk
– 2 tbsp of sugar
