How to bake Turkish Ramadan Bread PITA (Ramazan Pidesi)

Ramadan, the holiest month of the year, is a time that Muslims from all over the world wait for, and Ramadan not only comes with fasting but also unique flavors that adorn iftar tables.
The beloved Ramadan pita, a painstakingly prepared circular flat bread, with a baklava-like pattern as a crust, is an absolute must for iftar dinners and is evident by the long lines that build up in front of bakeries during rush hour. Why this special bread is only prepared during the month of Ramadan and only in the afternoon remains a mystery; however, the fact that it is more expensive to prepare and much more time consuming could have a lot to do with it. Plus, waiting in line at local bakeries to pick up this high-in-demand bread piping hot out of the oven just in time for the fast-breaking meal has always been a steadfast tradition surrounding Ramadan.

I’m kind of, slightly, obsessed with Turkey and all things Turkish.
The smell of this bread so good from the egg yolk and the seeds with the crisp outside, hollow sound, chewy but light texture.
And so during this Ramadan, I made it my mission to make this traditional style bread.
Ramadan pita: The queen of İftar, sahur tables

Ingredients:

350 g white flour
150 g whole wheat flour
350 ml of water
10 g instant yeast
10 g salt – 2 tsp
Yolk of 2 eggs
1 tablespoon butter
Breadcrumbs
Sesame
Nigella
Steps
1- Combine 350ml water and 10 grams of instant yeast in a large bowl.
2- Stir 350 g of white flour, 100 g of whole wheat flour and 10 g of salt in the bowl until all the ingredients are well mixed.

3- Now it’s time to knead the dough. You can knead with a mixer or by hand. If you are using a mixer, process the dough for about 10-15 minutes using the dough kneading hook.

If you choose to knead by hand, put the dough on the work surface and start kneading. Feed the dough with more water and knead the dough to get a more elastic and delicious dough while wet the dough with your hand. Knead the dough for 15 minutes. Put the dough in the bowl again, cover it with a damp cloth and let rest for 1.5 hours.

4- Remove dough from bowl and place onto a floured work surface. Open it with your hand to be rectangular. First fold the top towards the center. Then fold the bottom towards the middle and make the dough triple. Fold the short edge of the dough by rolling it onto itself.
5- Divide the dough into 2 equal pieces and form each piece into a small round ball with a smooth top, pulling dough from the sides and tucking the ends underneath the bottom.
6- Sprinkle breadcrumbs on a clean cloth. Transfer the dough ball on it and gently forming with your fingers, flat and round bread. Let dough rest for more 1.5 hour.
7- Sprinkle a little breadcrumbs on baking paper and transfer the dough on it.
8- Add 4 tablespoons of water, 1 tablespoon of butter to the yolks of 2 eggs and whisk.
9- Wash it with a lot of the egg mixture with your hand or brush.
10- Use your finger tips to make a border around the edge and create a quilt pattern or criss-cross.
• You can also apply a bit of egg mixture on your hand so that your hand does not stick.
11- Sprinkle sesame seeds and nigella, preferably as much as you like.
12- Place the pita in the oven at 250 degrees.

• After placing the pita in the oven, soak the surface of the oven.
• Pita will be cooked in about 11-13 minutes.
• In the fifth minute, open the oven and take out the baking paper.
