Can we make sourdough AIRY BREAD from STIFF DOUGH with ordinary WEAK FLOUR?

Wrongfully there is widely accepted that a stiff dough (low hydration dough) means tight bread. In addition, if the flour is weak, there is “no chance” for an aerated bread. Most recommendations says that for open cells it is necessary to have high hydration dough and strong flour.

Not my best crumb here in my video (I guess due to the slightly underfermented in bulk phase) but as you see there is a lot of potential for a light bread with wide open cells and great ovenspring. I baked second loaf after 30hours of cold proofing but in the matter of alveoli I did not notice a significant change, in a good way (taste was improved).

I do not know the percentage of protein for this flour, as long as it was purchased from the peasant market (obviously it is not a commercial brand flour). I consider it a weak flour because at a hydration greater than 70-72% it becomes too extensible and can no longer work with it.

Formula for two loaves:
650g white fresh flour from Peasant market
405g water
123g sourdough starter (100% hydration)
15g pink salt

Method:
2 hours autolyse. mix the dough with the starter (slap and fold). rest 0.5 hour. mix salt into the dough (slap and fold). rest 1 hour. lamination. rest 2 hours. coil fold. rest 1.5 hours. (total 5h “bulk”) shaping. proofing in the fridge overnight for 15 hours. bake as usual on baking steel 10-15min with steam at 240 degrees Celsius then without steam at 210 degrees Celsius for 30-35 minutes.
