Bread Egg Chili is a quick and easy breakfast/brunch recipe by @AprilFlower Arts. It has toasted bread slices coated with a delicious chili-garlic sauce. It is a new and interesting way to make your bread & eggs! I have also included a vegan/vegetarian alternative for eggs.

Ingredients for Bread Egg Chili (Serves 2):
3 Eggs
Egg Replacement: 3 tbsp corn starch dissolved in 9 tbsp (135 ml.) water
Bread – 5 slices
Cooking oil/butter – 3-4 tbsp
Garlic – 1 ½ tbsp finely chopped
The white part of spring onion (optional) – ¼ cup, chopped
Onions- ½ cup finely chopped
Carrots – ½ cup chopped or julienne cut
Colorful bell peppers (capsicum) – ½ cup. Chopped or julienne cut
Cabbage – 1 cup, thinly sliced
Soy sauce- 1 tbsp
Any kind of chili sauce – 1 ½ tbsp (or as per your taste)
Tomato ketchup/ sweet n sour sauce – 2 tbsp
Salt n black pepper to taste
2 tbsp water
Green spring onions to garnish
