1000 holes bread: how to make it with just 2g of yeast!

It’s not the usual bread, the result is surprising! 
 
INGREDIENTS
 500g (1 pound) 00 flour;
 350ml (11.8 fl.oz) warm water;
 2g (0.07 oz) fresh yeast;
 10g (0.3 oz) salt.
 
METHOD

 Knead the flour with yeast and water until smooth and sticky dough forms. Cover and set aside for 3 hours.
 Add salt, knead the dough for 2 minutes, cover again and let sit for 90 minutes.
 Knead for the last tie for 2 minutes, cover and let sit for 1 hour.
 Fold the dough as shown in the video. Cover and set aside for 45 minutes. Repeat the same procedure once more.
 Divide the dough into 2 and form into a ball without pressing on the dough.
 Roll the ball of dough in flour as gently as possible, then carefully form into a log, wrap in a towel and leave in the fridge for 12-18 hours. Repeat with another half of the dough to get 2 loaves.
 Carefully transfer each loaf on a piece of parchment and make a slight slit on top with a sharp blade.
 Bake on preheated bread stone and covered with a large and tall metal pan for 30 minutes at 230C/450F, remove the pan and bake at 180C/350F for 30 minutes more.
