🍞 No Yeast Soda Bread Recipe – Keep Calm Bake On!

🍞 No Yeast Soda Bread Recipe – There are a lot of people in April 2020 that want to bake bread, but can’t source yeast. Even flour has been tough to find. So we’ve updated one our earlier Irish Soda Bread Recipes, simplified the ingredients, and came up with this Noe Yeast Soda Bread Recipe.

Ingredients:
620g (4¼ cups) all-purpose flour
45 mL (3 Tbsp) granulated sugar
6 mL (1¼ tsp) baking soda
5 mL (1 tsp) coarse salt
85g butter, cold and cubed
425 mL (1¾ cups) buttermilk
1 egg

Method:
Preheat oven to 200ºC (400°F).
‘Cut’ or ‘Rub’ the butter into the flour, sugar, baking soda, and salt.
You can do this by hand or in a food processor.
Whisk the buttermilk and egg together.
Combine the buttermilk and flour mixtures in a big bowl.
Stir the dough together until it is too stiff to stir.
Tun the dough out onto a lightly floured surface.
Knead the dough for about 2-3 minutes; if the dough is too sticky, add a little more flour.
Transfer the dough to a greased loaf pan.
Score the top.
Bake until golden brown and a cake tester comes out clean, about 45 minutes.

welcome friends welcome back to the
kitchen another edition of stuff in ourcupboard pandemic pantry a lot of people
have been asking for a no yeast bread sotoday we’re gonna do a quick bread a
soda bread now quick breads are anentire class of baking that essentially
makes a bread like product using bakingsoda or baking powder as the leavening
agent instead of yeast much like a cakewould pretty much you know the line gets
sort of wishy-washy between cake andquick bread especially when you get into
something like banana bread a bananabread is a quick bread so in here I’ve
put flour salt and baking soda and I’vejust used all-purpose flour you could
use bread flour you could use wholewheat flour we have another soda bread
recipe way back on the channel and I’lllink to that below that uses whole wheat
all-purpose and wheat bran it gives anincredible loaf but I didn’t want to
bring that one back to the front becauseI know people are having trouble rightnow
even finding the basics even findingjust flour so if you have flour but
don’t have yeast feel very lucky thatyou can still make this bread I’m also
going to put in some sugar and somebutter and we want to cut the butter
into the flour much the same way youwould do if you were making a pie pastry
crust and of course you don’t have touse a food processor for this you could
put all of your dry ingredients in a bigbowl put in the butter and then just rub
it between your hands or use a pastryfork you’d come to the same place I have
got a lot going on I’m just a little bitlazy today I want to speed things up so
I’m using the food processor brings meto my next problem um
all of the recipes that you see for thistype of quick bread use buttermilk or
most all of them do or the really goodones do they use buttermilk because the
the complex flavors in a North Americanbuttermilk are what add to the
tenderness of the loaf and the flavor ofthe loaf but I don’t have buttermilk so
I’m using a plain yogurt and I’m gonnamix that with regular milk if you live
somewhere where you can get kefir usekefir instead that would work absolutely
fantastic what you’re looking for is theacid to activate your the baking powder
or the baking soda in this case bakingsoda and the other flavors to tenderize
the bread now I can already hear peoplescreaming that their mother told them or
their grandmother told them that if theydon’t have buttermilk you should add
vinegar to milk and I got to tell youthat’s one of my huge pet peeves in the
kitchen when you’re doing that you’remaking a situated milk and you’re adding
the acid that will activate the bakingsoda definitely
you’re not making buttermilk and reallyyou’re still losing out on all of the
flavors the other flavors thatbuttermilk is bringing to the process
because in North America buttermilkstuff that you buy at the grocery store
it’s a fermented milk product and it hasan incredible amount of flavor so in
this case if you don’t have buttermilkmy order of substitution or preference
of substitution would be kefir and ifyou don’t have kefir do what I did plain
yogurt and milk if you don’t have yogurtmaybe you have sour cream same sort of
thing you just put the sour cream in mixit with the milk and as a last resort
make a situated milk with vinegarsometimes you’ve got to do what you’ve
got to do and I think probably this isthat time so flour into a big bowl and
now we’re going to mix in our wetingredients and I just pour it in all at
once and then use a big spoon or spatulato mix it into a dough now once you’ve
got a big ball of dough put a little bitof flour on your counter you still want
to knead this a little bit even thoughit isn’t a yeast bread and you don’t
want to knead it the same amountto do a yeast bread but you do want to
bring it together a little bit and buildsome gluten so a little bit of flour I
often don’t put too much flour when I’mdoing a yeast bread with this one I put
a little bit more because it is a verysticky dough and you just want to try to
fold it and knead it until it comestogether a little bit and if it’s really
sticking to your hand you can put alittle bit more flour but not much just
be very careful with it there we go twoor three minutes
and it comes together really nicely nowif you wanted to you could just take
this ball of dough put it onto a bakingsheet maybe score the top and stick it
in the oven and bake it as a round beabsolutely fine I’m gonna do mine in a
bread pan because I’m looking for a loafso this is just a matter of shaping it
so that it fits into the pan and intothe pan now you’re not going to be able
to shape this like you would a regularloaf of bread it’s it’s not like that
but I am going to score the top just tohelp it expand a little bit we’re going
to stick this in the oventhat’s a pretty good-looking loaf you
got there Glen oh so uh sort of bread orI don’t know what else does it call
quick bread it’s called the quick ah alot of people would call it a yeast list
bread fair enough um so this is not abread that I would use for sandwiches
but it’s great for toast mm-hmm it is athick hearty bread mm-hmm
it is you know it’s got lots of crust itis dense
it has tends to be very flavorful richand moist slather that and butter a
little bit of jam and that is amazingthat is that is an incredible breakfast
bread mm-hmm but it’s really easy and Iknow there’s a lot of people who want to
make bread who can’t get yeast so thisis it this is a kind of a great
in-between point that you can still havesomething for breakfast and there’s lots
of flexibility to it because it is aloaf bread you can you could probably
motion them old mushy banana right oryou can throw in raisins or you can put
in you know so you could even make itsavory you could put in some cardamom
caraway cardamom caraway or rosemary andthyme yeah so you know it’s a base this
is a bread that I would make again it’sfantastic for breakfast thanks for
