خبز عيد الميلاد – Christmas Bread – Cook with Sousou

Fill your house with festive and warming aromas by baking this seasonal Christmas Bread
إجعلوا روائح الأعياد تفوح بالحب في منازلكم وأعدّوا خبز عيد الميلاد كما تحضره سوسو

1 cup liquid milk, slightly warm
2 ¾ cups flour
1 teaspoon instant yeast
1 tablespoon baking powder
2 egg yolks
½ teaspoon salt
100g unsalted butter
5 tablespoons sugar
100g almonds and walnuts, grated
¾ cup raisins
¼ teaspoon powdered nutmeg
2 teaspoons lemon and orange grated rinds
½ teaspoon vanilla
1 teaspoon anise powder
¼ cup powder sugar
In a bowl, stir the yeast in the milk to dissolve
Mix the flour with salt and baking powder. Make a hole in the center and pour in
the yeasted milk. Draw little flour to the milk, and cover with a towel for 30 minutes
Once rested, add in the egg yolks. Then, add vanilla, lemon and orange rind, sugar, anise powder, and nutmeg. Keep stirring to combine
Then add in the melted butter, walnuts, almonds, and raisins. Mix by hand. If the dough is too stiff, add it a little more milk
Put the dough on a floured working surface. Knead until smooth for about 7 minutes. If the dough is very soft add some flour
Place the dough in an oiled bowl and brush some oil on top of the dough. Cover with nylon sheet and towel,
Set aside until it doubles in size for 1 hour
Cut the dough in two pieces, place the dough on a floured surface and knock it by pushing down with your fingers
Repeat same thing five for 5 to 6 times and finally shape as required
Grease the baking tray with oil and place the two doughs
Cover and let rest for another 15 minutes
Bake in a preheated oven at 180 degrees Celsius for around 45-50 minutes
Remove from the tray and dust with powdered sugar and decorate if needed
