Try this simple Oat & Chia Pancake recipe at home!

Cooking Time: 10 minutes
Serves: 4
Ingredients
Pancake batter
2 cups rolled Bobs Red Mill oats, ground to flour
1 banana, ripe
¼ cup chia seeds
1 egg
1 3/4 cup Eco mill Almond Milk
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
1 teaspoon vanilla extract
1 teaspoon maple syrup
½ teaspoon cinnamon powder
Pinch of salt
Butter to cook
Peanut & Maple Syrup
2 tablespoons Naturalli peanut butter
2 teaspoons coconut oil
4 tablespoons Meridian maple syrup
1. Pancake Batter: In a blender, grind rolled oats to flour. Add all remaining pancake ingredients & and blend until combined.
Allow to rest for 5 – 10 minutes.
2. Cook: In a large skillet over medium to low heat, brush butter and pour batter in small amounts for pancakes. Once bubbles have formed, flip to cook the other side to a light golden brown. Repeat.
3. Peanut & Maple Syrup: In a medium saucepan, heat coconut oil over a medium to low heat. Add peanut butter and maple syrup and stir to combine.
4. Serve: Stack pancakes high and drizzle with syrup. Enjoy!
