When you can’t choose between Vanilla or Chocolate cookies, just go half and half and try this amazing and easy recipe! INGREDIENTS 1 cup butter
1 cup light brown sugar
3/4 cup sugar
1 egg plus 1 yolk
1 tsp vanilla extract
1 1/4 cup all-purpose flour
1 1/4 cup bread flour
3/4 tsp baking soda
3/4 tsp salt
3 tbsp peanut butter
3 tbsp cocoa powder
8 round chocolate truffles, cut in half
A pinch of sea salt flakes
METHOD
1. In a bowl of beat the butter and sugars until light and fluffy for 3-4 minutes. Then add the whole egg and egg yolk, then beat until mixed, and add vanilla. Gradually add the dry ingredients, whisking until fully turned on.
2. Divide the dough into 2 parts. Add peanut butter to one half and add cocoa powder to the other. Mix to combine and then smooth each half into a rectangle of about 6 x 8 inches. Wrap and refrigerate for 1 hour.
3. Once the dough has cooled, roll the dough into a 1/4 inch thick rectangle. Place the chocolate dough on top of the peanut dough and cut the stack in half in the middle. Fold few times, then wrap and refrigerate again for at least 1 hour.
4. Cut the dough into thick slices and process 2 slices at a time, place the half truffle in the center of 1 slice, then put another slice on top and gently squeeze both slices together. Bake for 9 minutes at 180°C/350°F.
