Alchemy Sourdough | Bread Baking for Beginners

Here is a step-by-step video following the Alchemy Sourdough Recipe from Bread Baking for Beginners by Bonnie Ohara! As the final and most advanced recipe in this book, it is definitely the loaf that requires the most attention. It is delicious & well worth the wait…if you can get past the prep work and time management needed to make this bread!
I’ve provided my “bread schedule” for this recipe (see below). It helps me to map out my days & times when I plan on baking this bread. Obviously, you don’t have to follow these times exactly, modify and adjust as needed. I just hope this gives a good breakdown of the time it takes and the scope of work!

// PAIGEY’S BREAD SCHEDULE FOR ALCHEMY SOURDOUGH

DAY ONE:
8:00 AM – Feed Starter to prepare for Step One of the recipe
8:00 PM – Prepare Starter by performing Step One (starter should be at peak activity now)
** Feed your sourdough starter again right after performing this step **

DAY TWO:
8:00 AM – Prepare Second Build by performing Step Two (starter should be at peak activity)
12:00 PM – Mix Ingredients, then allow dough to rest for 30 mins
12:30 PM to 2:30 PM – Complete stretch & folds
2:30 PM to 5:30 PM – Allow dough to rise, uninterrupted
5:30 PM to 5:45 PM – Divide & Preshape
5:45 PM to 6:15 PM – Allow dough to bench rest
6:15 PM to 6:30 PM – Shape Loaves
6:30 PM to 7:30-8:00 PM – Allow dough to proof until ready
8:00ish PM – Bake Bread OR Refrigerate Overnight

DAY THREE:
If you refrigerated your dough overnight, bake your dough anytime the next day.
