Sourdough Bread Recipe

On the first day:
Mix 50g of wheat flour (type 550)
50g water and 1/2 a teaspoon of active sourdough starter
let it rest for 24 hours

On the second day:
Mix together 250g of wheat flour (type 550) and wheat flour (type 1050)
add 330g water and your mixture from the day before
mix for one minute, let it rest for 30 minutes, add in 12g salt and a little water and
mix again for 5 more minutes
add your dough to a greased bowl and fold the edges into the middle
let it rest for one hour and repeat the folding process, repeat this step three times so
your dough will rest for three more hours with folds in between
after the three hours put your dough onto your kitchen counter, fold again and let it rest for 30 minutes
then add it to a basket or bowl, seam side up. and let it rest in the fridge over night

On the third day:
Preheat a pizza stone in your oven to 250 degrees Celcius for one hour or a baking tray if you don’t have one
pour half a glas of water on the bottom of your oven to create steam
and bake your bread for 10 minutes on the highest temperature. Then reduce the heat to 230 degrees and bake until golden.
