Buckeye Sugar Cookies
Servings: 8

Cook Time: ~20 mins.
1 cup(2 sticks) butter, room temperature
1 1/2 cups sugar
½ tsp. salt or 1 tsp. kosher salt
1 egg
1 tsp. vanilla extract
½ tsp. baking powder
2 ¼ cups flour, AP
¼ cup Buckeye Sugar
1. Preheat oven to 400*F. Line baking sheet or spray.
2. Whisk butter, sugar, and salt in a mixing bowl on a high speed, 2-3 minutes.
3. Add egg and vanilla. Mix thoroughly. Whisk baking powder into flour in a separate bowl.
4. Add half the flour to the mixing bowl. Mix until just incorporated, stopping and scraping down the sides occasionally.
5. Add remaining flour and mix until combined.
6. Form dough into 1 ½ inch balls and toss to coat in Buckeye Sugar.
7. Place dough balls on baking sheet a few inches apart, about a dozen per tray. Bake about 16 minutes or until no longer raw in the center and a bit crusty on the bottom. Cooking times may vary depending on the condition and age of the oven.
8. Cool 15-30 minutes and serve as desired.
