Oven temp: 400F
Cook Time: 45-55 minutes
Crust
1 cup flour
1/2 tsp salt
1/3 cup + 1tbsp shortening (butter flavor)
3 tbsp cold water
Filling
8 cups sliced/peeled apples (about 6 apples. Prefer red over green)
1/2 cups sugar
1/4 cup flour
1/4 tsp cinnamon
1 tbsp lemon juice
Topping
1/2 cup softened unsalted butter
3/4 cup flour
1/4 quick oats
2/3 cup brown sugar
Mix flour and salt. Cut in shortening until particles are size of small peas. Add cold water, tossing with fork until all flour is moistened and gathers into a ball. Wrap dough in shape of a hockey puck. The flatter it is, the quicker it will cool. Refrigerate about 45 minutes or until dough is firm and cold, yet pliable. If refrigerated longer, let pastry soften slightly before rolling.
Heat oven to 400°F. Using floured rolling pin and surface, roll pastry dough into circle 2 inches larger than 9-inch pie plate. Fold pastry into fourths; place in pie plate. Or use saran wrap like I did!
Toss filling ingredients together. Pour into pie plate, mounding apples toward center.
Topping; with 2 knives, cut the butter, flour, oats and sugar until a crumb forms. Sprinkle evenly over top of pie.
Bake 45 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble. Transfer to cooling rack to cool.
