Baking Sourdough Bread with Ms Farida and Danis

Danis is a student at P721k. In school, Danis was provided withfunctionall literacy, occupational and vocational training, technology, the arts, and community-based instruction. Danis works in the food service and culinary arts programs of the school. He participates in the different programs like recycling. He is part of the gardening program and the composting program.
He volunteers by making sandwiches and works in community. Danis was doing well with the program. Then the pandemic hit and the school was closed. Mom Farida wanted to continue with the programs but did not know how to engage Danis. She was inspired by her friend Zoey, who is a gardener, a food enthusiast and a baker. She learned baking sourdough bread from Zoey. Danis helps in cleaning the work area.
In the video, mom shows us how to bake sourdough bread. After baking, Danis helps mom deliver the bread to family and friends. Baking sourdough bread is a long but rewarding process. The bread taste delicious!

Here is the Sourdough Bread Recipe that Ms. Farida used in the video:

In the large bowl add :
800 gr. warm drinking water
Flour:
700 gr. whole wheat
100 gr Rye flour
200 gr All purpose Flour

After 5-6 hours add starter 250 gr fed starter.
22gr salt dissolved in 50 gr water, adding little by little and mixing in well.

Let rest for an hour covered.
Fold and stretch 40 min between each.
Shape, using table mat, rice flour, dough cutter.
Put upside down into banneton.
Refrigerate overnight covered.
Preheat dutch oven, oven to 500F for at least 15-20.
Take out the dough, gently put on baking paper, covered with some rice flour.
Score.
Transfer carefully to very hot dutch pot, cover with lid, remember it’s very hot 500F.
Bake for 25-30 min at 500F.
Lower the temp to 450F, open the lid and bake another 20-25 min until golden color.

Take out carefully, put on cooling rack
Let cool till warm, cut with a special bread knife and enjoy
