I don’t make pancakes or waffles very often because frankly, they rarely taste good when you have to make them gluten free and vegan. I have had better luck with mixes than with recipes from scratch, so I was hopeful this brand would taste good since other Cup4Cup products I have used were great. Luckily, these turned out perfectly doughy and paired perfectly with some chocolate syrup.
I made these waffles with Cup4Cup Waffle and Pancake flour using the recipe on the back of the bag. I substituted plant based ingredients for the butter, eggs, and milk the recipe called for. Cup4Cup is certified gluten free (and made in a dedicated gluten free facility) and is certified non-GMO.
When making the mix, I subbed the egg for banana, the milk for coconut milk, and the butter for Earth Balance and it worked just fine. Since I baked them in my waffle stick pan (Pampered Chef), I cooked them at 400F for 20 minutes.
