In today’s video I share with you my recipe for oatmeal and Zucchini Waffles. These are a great healthy breakfast idea for lazy weekend mornings. You can also use these for meal prepping by making them over the weekend, storing them in the fridge or freezer, and then placing them in the toaster to reheat.
Oat and Zucchini Waffle Recipe
– 1/2 cups Zucchini
– 2 tbsp oil
– 3 tbsp sugar
– 1/2 tsp cinnamon
-3/4 tsp baking powder
– pinch of salt
– 1 1/2 cups oats or oat flour
– 1 cup milk (any type works)
1) Finely grade the Zucchini and then placing in a towel and squeeze most of the water out of it. Set that aside.
2) Place your oats in a food processor or blender and grinder them up until they are powdery like flour. Place this in a bowl.
3) Stir in the cinnamon, baking powder, and salt.
4) Add in the oil, sugar, and milk. Stir that together until there are no clumps. Make sure to scrape down the sides of the bowl.
5) Stir in the dried off Zucchini.
6) Heat up and grease your waffle iron. (You can also make these into pancakes.)
7) Cook all of the waffles like normal. This recipe makes 5-6 medium size waffles.
8) Top with syrup, fruit, or any other topping of your choice. Enjoy!
