Ingredients (0:52)
2 large eggs
1 ½ tbsp whole milk
¼ tsp vanilla extract
¼ cup cake flour (or ¼ cup cake flour minus ½ tbsp, plus ½ tbsp corn starch)
½ tsp baking powder
2 tbsp sugar
Butter or oil (for greasing the pan)
Make the Batter (1:22)
Separate the eggs. Whisk the milk and vanilla in to the egg yolks, then sift in the flour and baking powder. Whip the egg whites until foamy, slowly add in 2 tbsp of sugar and whip to stiff peaks. Whisk in 1/3 of the egg white batter to the yolk mixture. Gently old the yolk mixture in to the remaining egg whites with a spatula.
Making the Pancakes (3:25)
Add 2 scoops of batter (x3) to a greased skillet. Add 1 tbsp of water and cover for 2 minutes. Add remaining batter evenly to all 3 pancakes and cover for an additional 5-10 minutes until set. Add an extra tbsp of water if needed to continue steaming. When ready, flip the pancakes, cover and cook for an additional 5 minutes.
Plating & Tasting (5:00)
Dust with powdered sugar and serve with maple syrup, butter, whipped cream, berries – whatever you like!
