Bake with me: Simple Sourdough Bread

Hello Everyone! Quarantine allowed me the time to re-discover a hobby. I’ve always loved baking and it used to be one of my favorite things to do in the summer back when I was in high school and college. I’ve learned, just from watching YouTube videos like this, how other people make their sourdough bread and sourdough starters at home. This is a very simple way to make the bread.

Recipe:
– 128 g starter that is 100% hydration (I recommend homemade starter, but store bought should be fine)
– 247 g water
– 10 to 12 g salt (depends on your preference)
– 300 g white flour
– 75 g whole wheat flour

Stir to combine the starter, water, and salt before adding in your flour to make a rough dough ball. Allow the dough to autolyse or fully hydrate the flour for thirty minutes to an hour in a covered bowl at room temperature before doing your first shaping. Tuck the dough into a tight ball, allowing the stickiness of the dough pull itself taught. Place the dough ball back into the bowl and rest for 30 minutes before doing your first stretch and fold. Do stretches and folds for a total of 4 times with thirty minute increments. Allow the dough to bulk rise for an additional 4-6 hours depending on your kitchen temperature (mine was about 75F to 80F). Do the final shaping before proofing over night. Score and bake in a dutch oven. 20 minutes with the lid on at 480F and 20 minutes with the lid off at 450 F. Allow to cool completely before cutting into it.
