today I decided to put an omelette mixture into a waffle machine… and it worked? I think lockdown is getting to my head – why else would I try this. I’d recommend giving it a go if you’re bored and want to do something new with your eggs. a downside is that I now have to clean a waffle maker, which is definitely more effort than cleaning a regular old pan 🙁

I tend to just eye-ball my omelettes, but here’s a recipe anyway. You can use so many different veggies, cheeses or even meats like ham! It is your omelette, after all.
serves 1
– one egg
– 2 tbsp milk
– plenty of salt and pepper
– 3 cherry tomatoes, diced
– half a bell pepper, diced
– 2 spring onions, diced
– 1/4 cup cheddar cheese
– 1/4 cup baby leaf spinach
crack your egg into a bowl and add the milk. whisk with a fork and season according to your preferences. add in the diced vegetables and cheese, and stir again. grease your waffle iron or regular pan as appropriate and cook for about 3-4 minutes. cooking time will depend on your waffle iron and waffle thickness. enjoy!
