PANCAKE BATTER
100g / 4oz plain or self-raising flour
Large pinch of salt
1 standard egg
250ml/1/2 pint milk
1 tablespoon melted butter
1) sift flour and salt into bowl
2) beat to smooth creamy batter with unbeaten egg,half the milk and melted butter
3) stir in the remaining milk and use as required.
PANCAKES
Melted butter for frying
1 recipe Pancake batter (left)
1) lighty brush base of 20 or 22cm/ 8 or frying pan with melted butter.stand over medium heat
2)when pan and butter are hot,pour in 2 to 3 tablespoons of batter mixture (just enough to coat base of pan thinly evenly)
3) fry until golden brown, Turn over with fish slice or spatula or toss
4) cook second side until golden and mottled
5) repeat with the rest of batter mixture.
MAKES 8 PANCAKES
