Worlds Best Chocolate Chip Cookies
Makes 36-40 cookies
Ingredients:
250g (9oz) Butter
2 teaspoons Vanilla extract
1 cup Brown Sugar
1 cup White Sugar
2 eggs
Pinch of salt
520g (1lb 2 oz) Self Raising Flour
250g (9oz) Dark chocolate chips
Directions:
1. Preheat oven to 175 degrees celsius.
2. Line baking trays with baking (parchment) paper.
3. In a freestanding mixer bowl add your butter and both sugars. Beat until well combined.
4. Add your eggs and beat well after each addition.
5. Add a pinch of salt and vanilla extract. Beat to combine.
6. Turn mixer off and add half of your flour, beat gently to combine.
7. turn mixer off again and add remaining flour, gently mix to combine.
8. Add chocolate chips and mix to combine.
9. Scoop out desired size cookies and space with at least 2 cm (1 inch) spacing between each cookie to allow for spreading.
10. Once trays are full, bake in the oven for 10 mins, or until golden.
11. Allow cookies to cool on the oven tray for 5 mins before carefully removing with a spatula and placing on a wire rack to cool.
12…..eat and enjoy. These are amazing warm and even with a scoop of ice-cream on top for an indulgent treat.
