This rye bread is one of my favorite bread recipes of all times. The taste is rich and complex. Malty, nutty, caramel-y rye is truly not something you can buy in any store.
Barley or wheat malt is a key ingredient and the bread won’t be the same without it.Vitamin C or citric acid is also in my opinion necessary to balance the flavor.
