Dough (A):
300g (10.5 oz) of all-purpose flour use
210ml (0.9 cup/7oz) of warm water
1/2 tsp of salt
Roux (B):
2 tbsp of all-purpose flour
60ml (1/4 cup) of vegetable oil
Others (C):
Some chopped green onion (about 3-4 stalks)
Salt to sprinkle on the dough
Sauce (D):
4 tbsp light soy sauce
2 tbsp black vinegar
1 tsp sesame oil
3 tbsp chopped spring onions
1 tsp chili oil (Optional)
Method:
– Combine (A) in a mixing bowl. Mix well with a spatula.
– Continue mixing (or with an electric mixer with the dough hook attached) until it is smooth and stay free from the bowl. Cover and rest for 30 minutes.
– Mix (B) in a small saucepan. Heat until the oil starts boiling to form a roux. Set aside to cool.
– Divide the dough into four. Roll each portion thinly into a long rectangle.
– Apply the roux on the surface but leave about one cm free from the edges.
– Sprinkle the salt and spring onion as in (C)) on the surface.
– Roll up the dough like making a Swiss roll. Roll and stretch the dough to form a long rope.
– Coil the rope to form a round dough.
– Roll out to about 1/4 inch thick circle.
– Pan-fried over medium heat until it has charred lines and speckled spots.
– Flip over and cover the pan for one minute.
– Remove the cover and continue pan-frying until both sides are golden brown. Remove from heat.
– To make the sauce, simply combine all the ingredients in (D).

Hello guys. I’m KP Kwan from Taste of
Asian food. I have not eaten scallionpancake for a while and I would like to
make some today. This pancake is called葱油饼 in Chinese, and it is not like
any other pancakes.The surface is crusty and crispy, with
scallion sandwich in between layers ofpastry inside. It is a savory, refreshing,
delightful, and easy to make. So letme show you how I make it in this video.
Keep watching. Cut the scallions crosswiseinto 1 to 2 mm thin rings.Mix the flour, some salt, and water in a
mixing bowl.When it starts to clump together,
continue mixing by using an electricmixer with the dough hook attachment.It takes a few minutes until the dough
becomes elastic and stay free from thecontainer. Cover and let it rest for at
least 30 minutes before continuing.Now we move on to prepare the roux (or
the oil mixture).Combine the oil and the flour in a pan.
Heat up over low heat until it thickens,then remove and let it cool down before
use.Transfer the dough onto a working
surface, and divide it into four equalportions.Roll out one of the passion into a long
rectangle.Now apply the roux, that is the oil
mixtureI meant, onto the pastry, and they clean
from the edges at least one centimeter.Next, sprinkle some salt on it,and sprinkle the scallions liberally on
it.Roll it up like making a sweet roll.Seal up both ends and the folding.Use your hand to stretch and roll it
into a long rope.Coil up the rope,and now it looks like the shell of the
snail.Roll it out again to a circle about a
quarter-inch thick.Do it gently and be careful not to break
the bubbles.Pan-fry the first side until it turns
golden brown, then turn it over, coveredand continue pan-fried the second side.The temperature increases when the lid
is on and helps to puff up the layers.Transfer to the chopping board and cut
it into four. I want to show you thelayers inside.If you want to make the dipping sauce to
go along with it,combine the light soy sauce, black
vinegar, sesame oil,some chili oil which is optional, and
garnish with some chopped scallions andchili.Now it is ready and let’s enjoy the
