GLUTEN-FREE PANCAKES
Ingredients:
1 Cup Gluten-Free Flour (I used Bob’s Red Mill 1-1 Baking Flour)
1 Tbs. White Sugar
1 Tsp. Baking Powder
1/4 Tsp. Baking Soda
1 Egg
3 Tbs. Melted Butter
1 Tbs. Maple Syrup
3/4 Cup Water (Milk works as well)
Directions:
1. In a medium sized bowl, whisk together the flour, sugar, baking powder, and baking soda. Set aside.
2. In a separate bowl, whisk together the egg, melted butter, and maple syrup. Add the water (or milk)
and whisk together.
3. Add the wet ingredients to the dry ingredients and whisk until just combined.
4. Heat a non-stick pan to medium heat, and put on 1/4 cup of the pancake batter (I used a large ice
cream scoop to make it easier). Cook for about 1 minute, or until the bottom is golden brown. Flip
pancake and cook for another 1-2 minutes, or until both sides are evenly cooked. Repeat with all
pancakes.
5. Enjoy!
