Pandan Mochi Waffles

**I FORGOT TO MENTION IN THE VIDEO – after you make your batter, it’s best to refrigerate it for 30mins-1hr before making it into waffles. It helps it set and thicken up a little.**

Ingredients:
– 2 large eggs
– 1/2 cup sugar
– 1/2 tsp salt
– 1 1/2 cup milk
– 1 tbsp vegetable oil

-1 cup cake flour
– 1 1/2 cup glutinous rice flour
– 2 tsp baking powder

*Recipe makes approximately 10 4-inch diameter waffles for me.

TIP: switch out the milk for coconut milk and add some coconut extract if you have some for a coconut pandan taste 😋
