Making Claire’s Gourmet Girl Scout Cookies (BON APPÉTIT)

While in coronavirus quarantine, we decided to try out Claire’s gourmet thin mints! They turned out really well so if you would like to make them too, here’s what you’ll need:

Ingredients:
– 1 and 1/2 cups Cake Flour (Or regular flour but add a tablespoon of corn starch for every half cup- and sift!!)
– 1/2 cup of Powdered sugar
– 2 sticks room temp Unsalted Butter
– 1 Room temp Egg
– 1 teaspoon of Baking Powder
– 1 teaspoon of Black Cocoa powder
– 1 teaspoon of Dutch processed Cocoa powder
– 1 teaspoon of Kosher salt
– Peppermint extract
– 2 teaspoons of Vanilla extract
– 8 ounces Dark chocolate (for coating)
– .8 ounces Cocoa butter (or regular butter/refined coconut oil)

Instructions for the recipe:

TO MAKE THE COOKIES:
In a bowl add together all of the dry ingredients- flour, baking powder, salt, powdered sugar and cocoa powders, then whisk together. In the Kitchenaid, beat together (on low) the wet ingredients- butter, vanilla extract, peppermint extract, and the egg. Combine the dry ingredients one cup at a time with the wet ingredients.

On parchment paper, spread out the dough so that it is an 1/8th of an inch of thickness. Cover the dough with parchment paper and put into the freezer for about 30 minutes.

Once they are set, take them out and use a cookie cutter to cut out as many cookies as you desire. Remember to put flour or cocoa powder on the cookie cutter so it doesn’t stick to the dough. Pre-heat the oven to 350 degrees Fahrenheit and once it is heated, put the cookies in for 14 minutes but check them at 11 minutes.

Once they are done, take the cookies out (or put in the fridge) until they have cooled entirely.

TO MAKE THE COATING:
Bring a small saucepan of water to a boil and put a boil on top of it to melt the chocolate in. Make sure the bowl is not touching the water. Add .8 ounces of butter into the boil and then add 8 ounces of dark chocolate. Stir together until completely melted. Add about a half teaspoon of peppermint extract and stir.
Take off the stove and dip the cookies into the bowl covering them entirely with the coating. Place each cookie onto parchment paper and put them back into the fridge to completely set (about 30-40 minutes).
Then take out and enjoy!
