Chocolate and Mix Nuts Vegan / Plant-Based Cookies RECIPE
INGREDIENTS:
– 1/2 cup of Vegan Butter (I used Earth Balance Vegan Stick-Butter)
– 1/2 cup brown sugar
– 1/2 cup raw organic sugar
– 1/4 cup warm Almond Milk
– 1 tsp vanilla extract
– 1 -1/2 cups organic all-purpose flour unbleached
– 1 tsp baking powder
– 1 tsp baking soda
– 1/4 tsp pink Himalaya salt
– 1 cup of vegan chocolate chip
– 1 cup of mixed nuts
PREPARATION:
1- In a bowl mix the sugars and melted butter and stir until mixed
2- Add WARM milk and vanilla extract. set aside
3- In another bowl add all the dry ingredients, flour, baking soda, baking powder, and salt
4- Add the wet ingredients to the bowl with dry ingredients little by little and stir until you get a dough consistency
5- separate the dough in two for the chocolate cookies and the mixed nuts cookies.
6- Preheat oven at 350F
7- Make small or medium balls of the cookie dough and place them in baking trays and use Silicone Baking Mats

8- Bake for 10 minutes
