Quarantine Cooking: Banana Bread French Toast

I’ve been cooking a lot during quarantine. In this video I take a healthier twist on banana bread, and turned it into a weekend cheat meal.

Ingredients:
2 to 3 thick slices of banana bread
2 eggs
1 tbsp milk
1 pinch cinnamon
1 tbsp unsalted butter
2 to 3 tbsp maple syrup
1/2 tsp vanilla extract
2 to 3 tbsp lemon sour cream
1 tsp lemon zest

Directions:
1. Start with the slices of banana bread. Dried-out is better.
2. Beat the eggs, milk, and cinnamon until well combined.
3. In a nonstick skillet, heat the butter until barely foamy.
4. Thoroughly coat the bread with the egg mixture (dripping off excess), add to the pan, and cook about two minutes on each side.
5. Meanwhile, warm some maple syrup with the vanilla extract.
6. Top with a big spoonful of lemon sour cream*—the cool tartness will balance the sugar.
*To make lemon sour cream, add some grated lemon zest to sour cream and whip until thickened, so the cream won’t just melt and fade away when it hits the hot bread.
