Crispy Keto Waffles

Batter:
-2 Cups Blanched Almond Flour
-4 Tsp Aluminum-Free Baking Powder
-1/8 Tsp Pure Himalayan Pink Salt
-2 and 1/2 Tbsp Erythritol Sweetener
-2 Eggs
-2 Tbsp Pure Vanilla Extract
-1/2 Cup Water
-4 Tbsp Coconut Oil

Combine all ingredients, cook on greased waffle iron (I greased mine with coconut oil) until done

Coconut Whip

-Whip one can of Organic coconut milk, chilled with about 1 Tbsp erythritol sweetener until thick liquid is formed, place in freezer for about 10-15 min, or until it has become thick enough.

hey what’s up it’s Bella and welcome
back to my life alright so today’s video
is a what I eat in a day as a keto
person so for my first meal I have keto
waffles with a whipped cream alternative
using coconut milk and then for dinner I
make a salmon chicken dinner with super
simple salad so yeah let’s just get into
the waffle recipe let’s go
it’s 12:25 right now and I’m having my
first meal which is Kido waffles and
with my Kido waffles I am going to be
using a coconut whip which is a whipped
cream alternative or a heavy whipping
cream alternative and I’m gonna be
having that with berries and I think a
little bit of peanut butter on there
alright so let’s just get started

alright so for the coconut whip we’re
just gonna start with a can of coconut
milk here I’m using organic coconut milk
free from artificial colors and
artificial flavors it’s just the wild
harvest brand I like using this because
it’s just coconuts and guar gum and
that’s it so alright so we’re just
putting that in a bowl this had been in
the fridge from the night before just so
that it thickens up because normally
it’s a more liquidy so it becomes a
little bit more viscous here and now
we’re adding a little bit of a stevia
sweetener which is just erythritol
sweetener and stevia leaf extract and we
are whipping that up so it’s not gonna
form stiff peaks similar to heavy
whipping cream but it will get some
aeration from doing this and therefore
thicken up a little bit more just so it
becomes edible on waffles here and yeah
here I’m just showing you that the
ingredients are first one is erythritol
and then stevia leaf extract and natural
flavors so erythritol is the best
sweetener for keto because it doesn’t
impact the glycemic are your blood sugar
levels as much because it is a lower
glycemic index sweetener so yeah and
then we’re I’m just gonna put this in
the freezer for the remainder of the
time and yeah alright let’s get back
onto the waffles
so I don’t really measure anything when
it comes to my recipes I just kind of
throw things together and see how it
goes and kind of alter it along the ways
right now I’m starting with my almond
flour it is finely sifted blanched
almond flour okay so to start off the
waffles we’re gonna take two cups of
blanched almond flour I use blanched
almond flour as opposed to any other
kind of almond flour because it gives
the texture of on the waffles next I’m
using an aluminum free baking powder and
I’m using four teaspoons of this I use
aluminum free because without the gluten
in and yeast in normal bread you can’t
really hide the metallic taste so yeah
aluminum free and then I’m using pink
Himalayan salts and I’m using about 1/8
teaspoon of this yeah I just prefer it
to a normal table salt because it has
more minerals in it and then here we are
I’m using two and a half tablespoons of
my rifra tall sweetener this is how
stevia leaf extract in it it’s a low
glycemic index sweetener so that’s why
we like it on keto and then I’m just
stirring that up here and I’ll be adding
two eggs in there just crack them in
there stir it up there we go with whip
and then two tablespoons of pure vanilla
extract that just helps to add to the
sweet flavor for the waffles and then I
decided that okay yeah we needed more
liquid so I added 1/4 cup of water at
first mixed that up
excited I needed some more and then add
more on camera lens got foggy but yeah
so that is that I did I’ll make a note
here at the end I did also add four
tablespoons of coconut oil but besides
that your batter should be a little bit
thicker than a normal block the batter
just
because that’s how you maintain that
fluffiness with key okay good so alright
here we go
and here we are at my waffle maker and
I’ll be greasing at the waffle maker up
with some of the organic coconut oil
cold-pressed and unrefined yeah so I’m
just taking a spoonful here of coconut
oil and putting it on eating waffle iron
and then all I’m gonna do is just close
it and then I’m gonna flip it over just
to make sure that all the ceramic plate
is coated with coconut oil and then here
you see I’m just putting a few spoonfuls
of the batter you can do it based on
your size waffle maker but yeah that’s
how much I put on and boom they’re real
okay so yeah that is what we’re doing
I’m gonna continue doing this and yeah I
will catch you on the flip side
literally when I have the waffle flipped
so there we go
okay so that part got a little burnt
while I was talking to the camera but
this half looks great so I’m just gonna
show that half but yeah there is the
keto waffle it’s super crispy super
delicious so yeah if you want you can
make this into sorry I’m trying to get
good lighting if you want you can make
this into a more of a dinner waffle
style so you could take out some of the
stevia maybe reduce it to just like half
a tablespoon of stevia and you could
also put in like garlic and herbs or you
could even I once threw a cheese into
the batter and that kind of made like a
crispy cheesy waffle so that was really
good
but for today’s like breakfast brunch
kind of thing I’m gonna do the coconut
lip which is freezing up in the freezer
here and I’m gonna add some berries that
have been thawing out that we’re also in
the freezer so yeah so I guess I’m gonna
get actually sorry we’re doing this blog
style because I’m too lazy to set up
anything so I’m just gonna get a good
I’m we’re going okay so we have here we
go I’ll flip it around we have the cocoa
whip okay so if you can see it’s really
thickening up nice

I’m sorry maybe I can get like no okay
it doesn’t really look appealing so I’m
gonna get my waffle okay I should have
done a big dramatic reveal okay waffle
boom okay that looks delicious what the
waffle is complete and here we go I
guess here is the big reveal so here is
the waffle and the waffle and the cocoa
whip is under there so we have some
frozen berries as you can see it’s like
a normal waffle so yeah tastes good
wonderful delicious magnificent yeah it
tastes exactly like a waffle does Peter
or not
that’s exactly like a normal waffle
what’s delicious I would order it in a
restaurant if I was a normal person if I
was a keto person boom
but it’s go free I mean look at this you
can have all of this all of this and
still be Quito
okay meal – I put the video in slow-mo
because I needed more time to talk but
meal 2 was I cooked up salmon and
chicken with avocado oil coconut aminos
salt and pepper and I ended up serving
that with spinach feta cheese and
tomatoes for a nice summer salad so that
was my meal – all right that was it um
this is kind of a low-budget filming
video but I thought you know I’m making
it mine is well film it no time like the
present so alright that’s all I have for
