The Best Sourdough Waffles

These Sourdough Waffles really are the best that I’ve ever had. The complexity of flavor comes from the starter and the other ingredients are chosen to act as support.

Best Sourdough Waffles
Yield 4 servings

All ingredients should be room temperature
THE SPONGE:
1 cup sourdough starter, 200g
1 cup buttermilk, 224g
1 cup all-purpose flour, 120g plain flour
1 tablespoon light brown sugar, 13g
Mix the sponge ingredients together, cover the bowl with plastic wrap or a lid. Allow the sponge to sit at room temperature for 8 to 12 hours.
FOR THE BATTER:
1 large egg
3 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
1/2 teaspoon kosher salt, 3g
1 teaspoon baking soda, 6g
The ingredients for the batter can be whisked together, then added to the rested sponge. Follow directions for your waffle iron, or use a small ladle to make pancakes on a griddle. Enjoy! 😋

hi welcome to you in the kitchen wheretoday we are making the best sourdoughwaffles that I have ever tasted thisrecipe is so delicious and it goestogether very easily you do have to planahead because the first thing first stepis to make a sponge which sits overnightso start your starter here we go we’reusing 220 grams of starter like I saidthat’s 1 cup I have 1 cup of buttermilkthis was frozen and this is how I keepit in a little plastic baggie I have avideo on that I will post that at theend of this video let me take that downto zero so that’s one cup or two hundredand twenty four grams of buttermilk andthen I’m going in with one cup or 120grams of all-purpose flour this is 13grams one tablespoon of a light brownsugar and then you just beat thistogetherwell that took about 30 seconds just puta lid on this or plastic wrap whateveryou use and Park this overnight off tothe side somewhere and let it rest andwhen we come back I’ll take the one outthat I made last night and show you whatit looks like so through the magic oftelevision everything’s changed I havemy waffle iron this is the starter thatI made last night I made this at about8:30 in the evening and now it’s 11:40so it’s been out for a while nice andbubbly and active and now this is yourstarter so from that you’re going tomake batter it’s just one egg with threetablespoons of unsalted butter that’sbeen melted and cooled a teaspoon ofvanillaso it looks like a heavy-handed TSPthat’s okay and then you add this to thebatter that you made last night justkind of fold it in along with 1/2teaspoon of kosher salt and one teaspoonof baking soda that will react with thatbuttermilk to give you a nice lightwaffle just be careful because you don’twant to knock too many of those bubblesout that you’ve created but you have toexpect to lose some volume nowso once this is mixed you just goaccording to your manufacturersdirections for your waffle iron and waitto see how they come out they’re sodelicious when you do when you load yourwaffle ironwhat you want to do is just make surethat you’re pouring it out so that notto overfill it but you want to get outto those corners these smells so goodand I know how good they taste though Ijust couldn’t wait and I thought I wouldclose now this is warmed maple syrup andof course you can make this intopancakes if you don’t have a waffle ironyou can add bananas or berries you canmather slather rather jam on this Idon’t know if you can tell how lightthis is it’s just it’s light and airythe complexity of flavor that thesourdough gives it is just incrediblethere’s a little butter in there so itfinishes rich even though it’s light andthen you have in the background you havethat sweetness from just that little bitof brown sugar this is a really fabulousrecipe a keeper for surethank you so much for watching you knowI appreciate it let me know if you trythis you should bye guysyou
