2 medium purple sweet potato
2 large eggs
1 cup of milk
1 cup of purpose four
1 cup of tapioca flour
1/3-1/2 cup of sugar (add more if you like sweet)
1 tsp of canola oil
1 tsp of salt
1 tsp of baking powder
1 cup of coconut milk
