INGREDIENTS & MEASUREMENTS:
1 1/2 cup waffle mix (I use Krusteaz Buttermilk pancake mix)
1/2 cup oil
1/2 cup milk
1 egg
1 tbsp vanilla extract
1 tbsp use extract (You can find this at most Asian supermarkets. The one I’m using is the brand Ferna Primera)
DIRECTIONS:
-Preheat waffle iron.
-Beat egg into a bowl. Once beaten, slowly add about a third of your oil and milk mixture (I combined both in a measuring up so it’s easier to gauge how much liquid I put in as well as to avoid too many flour pockets).
-Add in your vanilla extract and ube extract. Mix well.
-Then, add 1/2 cup of waffle mix and mix till combined. (I do this to prep my wet mixture with the dry).
-After combined, add your 1 cup of waffle mix along with another half of your oil and milk mixture. (This is where it starts to look clumpy with a few tiny flour pockets WHICH is okay). Add the rest of your oil and milk mixture and mix till well combined.
-Depending on what waffle iron you have, adjust according to it.
-Spray waffle iron top and bottom
-Add a heaping spoonful of the batter in each well. (It doesn’t have to be fully covered, but depending on what model you have, results may vary)
-Close and let it cook for 2-3 mins. Waffles should be fluffy.
-When ready, remove from iron, dress with butter and syrup of your choice, and ENJOY~!
