hello and welcome back to you in the
kitchen with Matt I am your host Matt
Taylor today I’m going to show you how
to make waffles
more specifically Jackie Kennedy’s
waffle recipe I had a request to make
her recipe so here we go that’s what
we’re gonna do the story goes that
Jackie Kennedy’s waffle recipe was JFK’s
favorite thing to eat for breakfast
pretty cool I mean I don’t disagree
waffles are an amazing thing to eat for
breakfast really easy to do if I can do
it you can do it before you move on make
sure to subscribe to my channel hit that
notification belt so you won’t miss out
on any of my new videos let’s get
started first we want to separate our
egg whites from our egg yolks so I have
two bowls here and you just take your
egg and you can crack it on the side of
the table just split it apart like that
let the egg white drip out and then just
transfer the egg yolk over to the other
shell back and forth then just take your
yolk and put it in another Bowl and if
you get a little shell a bit of shell in
there use the other shell and it’ll come
right out I don’t have any shells in
there so we don’t need to do that and
now let’s beat the egg whites until
stiff peaks form takes about three or
four minutes with your electric mixer
[Music]
all right let’s take a look so when you
pull up your see that right there is a
stiff peak it doesn’t fall back down
into the into the egg white that what
that’s what we mean when we say stiff
peaks
let’s sit egg whites aside for now in
another bowl we will add 1/2 cup of
softened butter room temperature butter
we’ll add in our 1 tablespoon of white
granulated sugar this is staying true to
the recipe or you can add another
tablespoon of sugar if you like let’s
cream the sugar and the butter together
with our mixer now let’s add in our two
egg yolks I forgot to mention down below
the video I’ll list all the ingredients
I have 1 cup of cake flour yes we’re
using cake flour this is true to the
recipe
she used cake flour obviously if you
don’t have cake flour you can use plain
flour or all-purpose flour and a little
bit at a time of the cake flour and then
a little bit of our cup of buttermilk if
you don’t have buttermilk or access to
it I do have a buttermilk substitute or
homemade buttermilk recipe they can use
I’ll put a link down below where you can
find that add some of that little more
flour a little more of a milk
rest of our flower the rest of our
buttermilk and I always come in with my
spatula
since buttermilk is pretty thick I just
come in there and just get the rest of
it out and we want to put in our pinch
of salt give the sides of good scrape
there we go
the next part what we do is we take our
egg whites and put them in with our
batter and then take our four teaspoons
of baking powder and put that in there
as well and then with our spatula we’re
just going to fold the egg whites in
with the batter so just come underneath
fold it on top like that we don’t want
to break up all that nice air that we
have incorporated
so that’s why we’re just folding in with
a spatula all right there we go just
until everything is incorporated it’s a
nice Airy fluffy batter now we just heat
up our waffle iron and cook these up
once the iron is heated up and we’ll
give it a good spray with chicken spray
and on my waffle iron it goes up to
number six and I have it set at three
and a half we’ll take some of our batter
put it there in the middle close it up
let it do its thing all right flip it
around oh yeah look at that looks
fantastic and just coming here with a
fork you can grab it and just put it
over on your plate
smells amazing and then to finish it off
do some syrup
and some butter just the way JFK liked
it there you have it that is how you
make Jackie Kennedy’s famous waffles
really easy to do if I can do it
you can do it I’m Matt Taylor this has
been another episode of in the kitchen
