These potato waffles are the easiest vegan waffles ever! Keep them plain and then serve them with your preferred toppings. I like to serve them with hummus, guacamole, salsa or anything else I have on hand. My favorite breakfast is potato waffles, tofu scrambled, some steamed spinach and mushrooms and some fresh tomatoes… yum!

hi everyone its onion cooking withplants and welcome if you’re new to thischannel I’m really happy to have youhere and I would love to have you as anew subscriber where I can share regularrecipes with you also to my regularviewers welcome back for another quickand easy vegan recipe and today I’mactually going to show you how to makesome really lovely crispy mini potatowaffles so let’s get into the recipe[Music]so for this recipe all you need is someboiled potatoes so what I did thatyesterday was actually boiled somelittle jet size potatoes in their jacketi boiled them for about 40 minutes withthe water starting from cold so that wasthe total time that i cooked them foryou could peel these if you want to ifyou don’t like skin on your potatoesthen by all means peel it off but I liketo keep it there it just adds a littlebit of extra nutrition and these areorganic potatoes so I don’t mind that atall and potatoes are loaded withnutrition they have iron and lots ofvitamins and minerals and they’re notevil they don’t put weight on you it’sactually what you add to the potatoesthat adds weight to your body so thepotato itself is absolutely nutritiousand delicious so I’m going to cook theseup into some small waffles today and I’mgoing to position four of these into mywaffle iron so they fill up a quarter ofthe waffle iron each but if you wantedto you could do one bigger potato or youcould do just one small potato howevermany you want to make it’s totally up toyou just load your waffle iron up andthen you’re set to go okay and now I’mgoing to just close this up squish themin therebit hard I’ve got a and waffle iron whenyou normally pull the batter in the topbut it still works fine so just squashit together close it in there and thenleave this for a good 15 to 20 minutesto get really really crispy and then youcan check on them after that we want toget back boy stir up we want to get themnice and crispy and delicious now whileI’m waiting for these to crisp up youcan see the moisture is coming out ofthis one this is one where the batter isnot only important to the top but if youhave a flat waffle iron it’ll just comeout of the sides so you may get a littlebit of condensation coming out of theside so maybe just give that a wipe upwith a tea towel the the thing here isyou really want that moisture to comeout so that’s why I like to boil mypotatoes the day before I keep them inthe fridge and that dries them out a lotmore too you don’t want them tooso you when you’re making this otherwiseyou can have to wait quite a while forthem to crisp up so I like to just havemy boiled potatoes in the fridge readyto go and I can make whatever I like outof them I can make these I could make apotato salad I could chop them up andput them into a curry they’re just quickand easy and ready to go so for thisrecipe I like that method because itgets most of the moisture out and that’sa much quicker way to cook them but ifyou are short on time and you’ve onlyjust cooked your potatoes then put themin that’s fine and we’ll just have extramoisture and it may need take an extra 5or 10 minutes for them to cook so justbear that in mind so this is the finalproductit’s one big waffle or you can serve itin little individual sections as wellit’s totally up to you and this is sodelicious you can just serve this withhummus with la Kamali some salsa and myfavorite is to actually have this asbreakfast and I serve it with tofuscramble some tomatoes or tomatoesdepending on where you are in the worldsome spinach sautéed with some mushroomsand that is such a satisfying whole foodno oil breakfast it’s so healthy sodelicious and it easily keeps you goingto a lunch time so I am actually reallyreally hungry this smells so good so I’mgoing to get into this right now but Ilook forward to you joining me for mynext recipe I like to keep it supersimple and easy and no complicatedrecipes so I look forward to seeing yousoon and also if you want to join me onInstagram or the Facebook group I’llleave links to that below as well socome on over and join me there tooI’ll see you soon bye for now just smell
