sweet potato pie with candy coated walnut topping

1-lbs sweet potato
1/2 teaspoon ground ginger- all spice
1-teaspoon cinnamon
2 eggs room temperature
3/4 cup white sugar
1/4 cup lite brown sugar
1/2 cup evaporated milk
1-9 inch deep dish pie shell
1/2 shot glass of dark rum- optional
1-teaspoon vanilla

candy walnut topping
1-12 0z chopped walnuts
1/2- cup brown sugar 1 shot dark rum optional
4 ounces water- cold

bake pie 350 degrees 55-60 minutes
or until knife comes out clean

good morning mrs. and dreamers Bob heretoday we’re going to learn how to makeBob’s famous sweet potato pie withwalnut caramelized wall that can betopping this recipe is not hard anybodycan do it the longest time it’s going totake is baking the sweet potatoes aswell as baking the pie but other thanthat it’s really easy so anyway I willput the list of ingredients and theirmeasurements down at the bottom here inthis block so come on and join me we’llget started making my pot alright guysthis is the recipe this is a 9 inch deepdish on baked shell you’re going to needa mixing bowl pound and a half of thesweet potatoes 1/2 a stick of butter atroom temperaturevanilla carnation evaporated milk 3/4 ofa cup of sugar and a quarter cup ofbrown sugar when you do the sugar makesure you pack it pack it as you can seethe fingerprint packet and two eggs atroom temperature and we also here havenutmeg we also have allspice and we alsohave cinnamon so again I will put thistogether for you I will leave the recipedown at the bottom also to guys youdon’t have to I dothis is Newfoundland screech which isCanadian run I use a half of a shotglass fault in my pie but you can useKentucky Bourbon whatever milk in a pierecipe I think the condensed milk worksbetter but the good thing about thisbefore you start beating it fold it init works better[Music][Music][Applause]all right we’re just going to add alittle bit of rum tennis actually abouta half a shot glass full like to thankmiss Lilly and Canada for this[Music]alright guys we are going to blind bakethis pie shell basically we’re going toput it on a sheet pan we’re going to beblood fitting in the oven for about 15minutes pull it back out add our sweetpotato concoction here then we’ll put itback in and it’s about forty about 50minutes to an hour and then we’ll startchecking it with a knifealright guys there is your blind-bake Iforgot to do it but I’ll tell youbecause even I make mistakes when you goblind bait put some fork holes so youdon’t have this it’s not gonna hurtanything it’s just but this way youdon’t have that puff so now we’re goingto add our sweet potato mixturesorry guys are moving around the kitcheninto our pie shellnow guys this is going to puff up as itbakes all right um give it a head sowhen it comes out it’s gonna kind oflook like souffle don’t panic it willsettle once it cools once it coolsenoughwill you put our candied pecans on thismake sure you smooth it down all the wayto the edges Center out so this is goinginto a 350 degree oven for 55 to 60minutes you’re going to take a butterknife after that time and put it in thecenter comes out clean it’s done so thenwhat you’re going to do is turn the ovenoff pull this out just let it rest andit like I said it’s gonna look like asouffle but it will settle so let’s getthis into our oven 350 degrees for 55 to60 minutes and we’ll see back when thispie is done all right guys this isreally easy to do the candied walnutsbag of crushed walnuts brown sugar youcan do this in a double boiler and oryou can do it in a non-stick pan I’mgoing to show you how to do it in anonstick pan and then we’ll show youonce that pie cools I’ll show you how toput it on top it’s very alright guysthis is the pie out since out of theoven as you can see it’s cooling now I’mgoing to show you how to make the candytopping to go on top of this all rightguys we have a like an 8 ounce packageof chopped walnuts we’re going to loadthese first just to put some color onthese so you can just put them in thefrying pankeep them moving around until they’retoasted okay guys we’re gonna speed thisup a little bit we’re gonna add aboutfour ounces of water the rest that’swhat we’re looking for so we’re gonnalet this reduce down a little bit andthen we’ll add our nuts if you guys wantto kick this up again and like I saidadd a little bit of dark rum this isCanadian dark rum from miss Lilyalright guy this that is what you arelooking for so what we’re going to donow is we’re going to add our walnutswe’re going to start turn the heat offwe’re going to let this sit and let itcaramelize over the top of the walnutsalright guys that’s what you should belooking for is pretty much that kind ofconsistency we’re going to let this coola little bit and then I’ll show you howto apply it to the pie alright now thata pie has cooled all we’re going to dowith these is in the center and we’regoing to smooth this out like I saidfrom the middle outthere you goso now what we’re gonna do is we’regonna take pi put it in the fridge letit completely cool and I’ll show you howto slice it okay guys that is cooling itis now room temperature so we’re goingto put the fridge for an hour or you cando this to overnight let it cool so I’mgoing to put this in the fridge I’mgonna let it cool off slice theinsulation to show you how to serve itokay guys it’s pie time let’s give thisbad boy a taste oh my godthis is too delicious so I should put awarning label on this anyway if
